Harlem’s Top Chef: Marcus Samuelson
Chef Marcus Samuelsson will be a contestant on the second season of “Top Chef Masters,” Bravo’s popular spin-off of its “Top Chef “reality series that premiers on April 6th. The Wall Street Journal spoke to Samuelsson about the opening of his new Harlem eatery, Red Rooster. Here is a short excerpt.
What kind of restaurant is the Red Rooster going to be?
I’m just excited to be able to introduce Harlem through food. There are some storytelling restaurants there and we’re the new kid on the block who can add our experience to it — farm-to-table fresh food, a little speakeasy in the basement. As much as we talk about it, people are just going to have to come uptown and experience it. That’s the most important thing.
We’re going to take a long time because we want to make it right. We think we’re going to open sometime after Labor Day. We can’t wait; it’s a milestone for us and it’s not going to be rushed by anything else. When the restaurant is ready, the restaurant is ready.
